Preparation Steps

1. Prepare the Semolina

Take 3.30 kg of semolina and soak it in water for about 25-30 minutes.

Once soaked, drain the water thoroughly and set the semolina aside.

2. Make the Sugar Syrup

In a large pot, mix 7 kg of sugar with water and cook until the sugar dissolves completely.

Let the syrup cool down to room temperature before using it in the recipe.

3. Mix the Ingredients

Combine the sugar syrup, semolina, and 3.5 kg of flour in a large mixing bowl.

Mix well to ensure there are no lumps. The mixture should have a smooth consistency.

4. Add Food Color

Add a small amount of lemon yellow and orange food color to the mixture for that signature Malpura look. Adjust the color to your preference.

5. Incorporate Dry Fruits

Mix in chopped dry fruits like almonds and pistachios. This adds texture and flavor to the Malpura.

6. Final Preparation

Once the batter is ready, you can fry the Malpuras in hot oil until they turn golden brown.
